This morning, I woke up with this craving for my mom ayam tomat. Basically chicken soup cooked with just ginger, garlic, and cut up tomatoes, seasoned with a little salt, white pepper and a splash of fish sauce.
I checked my pantry for rice and guess what… I ran out of rice. Shame on me..what kind of asian do not have rice in the pantry lol.
Geez.. switch gear then as I have already cut up my whole chicken for that dish., I put the cut up chicken pieces in my Instant Pot and add a can of crushed tomatoes, a little water, salt, pepper, sugar, basil, and oregano. Closed it and press manual for 15 minutes. Then on my second Instant pot I put 3 large russet potatoes, peeled (my son likes it that way) , cut up and add a little water, salt pepper and nutmeg and a couple cloves of garlic. Press manual after closing the lid and sealed the vent. Adjust the time to 8 minutes. I walked out from the kitchen and sat and typed my Lapis Legit blog. When it beeped, lunch is ready. I let the chicken sit for a while until the pressure is down. While preparing my mashed potatoes by adding whipped cream and butter.
Now who said that you have to eat junk food thru the drive thru for an Instant meal?
