Meatroll

Had a semi productive day yesterday and today. Had a good meeting with client and stayed until 4 in the office with so much work done. It was pouring when I left work, then stopped and poured again. Stopped by at Wal-Mart after picked my husband up. I went in to get stuffs for my cake order. By the time I was done shopping, it was madness. Soaked wet to get into the car. Umbrella did not even work its purpose. 

Stayed up until 2 am working on the cake. It was a last minute order. I saw a post on next door app. Someone looking for a cake decorator. So I offered to help as they have not find anyone to do it for them after couple days they posted. Just basic cake with a mix of 3 different flavors, chocolate, strawberry and vanilla. With buttercream and water color effect in the 2 colors theme on the sides and flower decoration in blue and pink. So here it is.

Delivered the cake today. Hope they like it. 

Dinner time just creeping on me. I was watching tv and saw the time it was 6:24. Oh boy..what’s for dinner? I hate to suggest take out since we did yesterday. 

I know I have ground beef in the fridge, so I thought, meatloaf. I have potatoes and carrots. No greens though. Mix my meatloaf in kitchen aid.

2 lbs ground beef

4 eggs

2 teaspoons Salt

1/2 teaspoons Pepper

1 teaspoons Nutmeg

3 tablespoons worchesthire sauce

2 tablespoons ketchup

1/2 medium yellow onion chopped

1 garlic finely chopped

2 pieces bread cut up into small pieces

1/2 cups milk

All mix well in the kitchen aid with paddle attachment.

Shape them into the loaf and spread sauce on top. Well, that was the plan, until I could not find my aluminum foil loaf pan nor the aluminum foil. Hummm what to do? I have parchment, so I thought … roll them into log. I divided the mixture into 4 and rolled on the parchment and twist the end. Stacked them on the rack in Instant Pot and add 2 cups water under the rack. Closed the lid and vent and press 25 minutes. 

Well since I can’t put the sauce on top of the meatloaf..errr..meatroll, I decided to make the sauce and drizzle on top the rolls after it’s done cooking. 

Sauce is a mixture of 1/4 cup ketchup, 1/2 cup worchesthire sauce and 3 tablespoons brown sugar. Heat up 1/2 stick of butter and sauteed 1/4 medium onion finely chopped until translucent, then add in the sauce mixture. Cook until bubbly. Turn heat off and set aside.

By now the meatroll is almost done. Time for the potatoes and carrots. Peeled the potatoes and carrots, washed and arrange them in the pot. Add water just enough to cover the potatoes half way. I did both whole, not cutting them up. Thought I’d just cut them up when they are done. Closed the lid and vent. Manual 3 minutes. Just to cook the c carrots first. When it beeped, release pressure, take carrots out and closed the lid again and run manual 5 minutes to continue cooking the potatoes. 

They were done at the same time.

Took the meatroll out, unwrapped and sliced. Arrange on the plate with the carrots and potatoes.

Drizzle the sauce over meatroll, add salt and pepper on the veggies. I did it on purpose not adding any seasoning for the potatoes and carrots so that I can share some with Max the puppy.

It was so filling and good. My boys both had clean plates, I mean cleaned. Meatloaf is one of our comfort food. And meatroll too hahaha. Definitely a keeper.

Tradition ia we have to have some blacked eyed pea for the new year. So we went ti Walmart last night to grabbed some. Whilst we were there, B overheard a couple where the wife got pretty upset with her husband as they could not find any canned black eyed pea on the shelf. He could not believe that she got pretty mad about it. Not to worry when you have Instant Pot as your secret weapon. Who needs canned stuffs when you can make it from those hard raw beans fast. We grabbed a bag of the beans. I presoaked my beans since we have the time. Cooked them in with my ham, onion, oregano, bayleaf, salt, pepper for 30 minutes. Then let the pressure down naturally. Add carrots and kale, cook again for 3 minutes and we are done.

So many traditions. We had one which I believe was passed on as my Chinese descent tradition. On December 22, which is mother’s day in indonesia, where I was born and raised, we have to eat these cute little balls made if glutinous rice flour boiled and them served with a lemon gingery syrup. It usually comes in white, red and green color. Though these days people are so crafty. What was told before not to play with your food is no longer apply. I saw people make this glutinous dough into fun animal shapes instead of just a simple little balls. Which what I decided to do. Been over 10 years since I moved to Texas, I have never try to even make this. But last year, 2016, I decided to give it a try. Thought my boys not gonna like it. I made just a little. I was wrong,  they actually enjoyed that as well.

Busy month December through February. Another thing that we always have for special days is the layer cake. We call it lapis legit. There’s also a three layers one, lapis surabaya. They both made of 30 to 45 egg yolks and tons of butter with very little flour and some sugar. The lapis legit has some spices added to it, speculas made of a mixture of cinnamon, clove,  cardamom,  nutmeg and allspice. It’s  made by baking layer by layer, 2 -4 tablespoonfuls batter for each layer. The baking process could take 3 to 4 hours. Hideous it is. But it worth all the works. People sell this lapis legit a lot of bucks. The good one could sold for 2 million Indonesian rupiah or like $200 for an 8″ size cake. Since it is so rich, we served thin slices of this cake. Trust me, it is good. This kind of cake that taste even better after few days.

The 3 layers one originally made by sandwiching the chocolate layer in between the vanilla. Though the creative bakers make so many different variance to this cake. There’s green tea or pandan flavor instead of chocolate, there’s the lapis legit in between the vanilla layers. There’s orange flavor. The sky is the limit actually. If it’s not because the amount of yolks being use to make this cake, I would be slaving in my kitchen making and testing different variations.

It is very common in Indonesia to use this 3 layers lapis surabaya as the base for birthday or wedding cake, like the birthday cake I made last night for one of my friend’s son.

Cold day saved by Instant Pot

You know..I got jealous when I heard it’s snowing somewhere else. I guess I just have to be happy that at least it is cooler now here in the Lonestar state.

I have been wanting to make chili but without the beans of course. My husband does not like beans at all.  While watching Limitless on Netflix this afternoon I started preparing my chili ingredients. Chopping my onion, garlic and seranno pepper, then rewinding my movie and then sautéing then in the instant pot, then rewinding my movie again.

After sautéing my onion ,  garlic, chopped seranno pepper and ground beef in the instant pot, I added the homemade chili spices, chopped tomatoes and tomato sauce and start my Instant Pot with the chili function for 30 minutes defaulted but I reduced to 25 minutes .

I will type the recipes tonight after the Walking Dead hehehee. I remember there’s garlic powder, onion powder, paprika, cayenne pepper, red pepper flakes, pepper and peppers, cumin, brown sugar, cocoa powder, salt and pepper.

And for dinner and to send meal for the meal train, I decided to make Soto Ayam, Indonesian chicken soup.

I blend the spices in my magic bullet and then sautee them in a little oil in instant pot with the Sautee function .

Add in the bone in chicken breast, 2 stalk of lemongrass, galangal, kafir lime leaves, water up to the 10 cups line. Closed and press manual 25 minutes. After it beeped, quick release the pressure and take the chicken out to shred. Add the cut up golden potatoes, closed and press manual 5 minutes. While in the other instant pot, I cook my hard boiled egg for 5 minutes then NPR 5 minutes. And then use that pot to cook my rice 6 cups with almost 7 cups water and closed the lid, press manual 3 minutes and NPR 7 minutes. Last one, boil water and soaked the glass noodle in it to softened the noodle.

I serve the Soto in a bowl…arrange the rice, glass noodle ,  shredded chicken, shredded cabbage, sliced tomato, hard boiled egg and pour the broth over it with the potatoes  Garnish with parsley and a wedge of lime to be squeezed into the soup.

The spices I blend was :

5 roasted candle nuts

1/4 onion

5 cloves garlic

2″ turmeric or yellow ginger

1″ ginger

2 teaspoons Salt

1 teaspoon White pepper

You can add more salt and pepper to your taste once it was done cooking.

My rice cooker was broke and since then I make my rice in the instant pot. The proportion is 2 cups rice with 2 1/2 cups water or chicken broth. Works fine for my Asian taste.

Oh my lord Neegan you are making me nervous. Wonder what is he gonna do now. That guy scares me.

Now dessert for me tonight is the cheesecake I made in instant pot the other night. It was perfect even though I used a regular 8″ pan instead of the springform pan. Took 30 minutes. Before that, I made cheesecake in the oven for over 1 hour. I haf to do it in the oven as it is a 9″ pan for the cheesecake and also made pumpkin cake. This was a dessert for my husband’s Christmas Luncheon at his office. So the cheesecake is

sandwiched in  between the pumpkin cake and covered with cream cheese frosting .  Yes it was deliciously loaded with calories but so worth to eat it. Once a year at least.

There was my day with Instant Pot. And ended my Sunday with Walking Dead and my cheesecake. Just perfect! Hope you all have a nice weekend and easy Monday ahead.

 

Star Wars

Don’t judge,  I tried to watch it but can’t get into these Star Wars buzz. Hey, people are different and that’s the beauty of it.

Well i am surrounded by Star Wars lovers. Yessss and got several challenges of making the…I repeat. ..the Star Wars cake.

The first one was the most challenging ones. Darth Vader cake. I sat down many nights thinking what i get myself into this time. Tried to figure out how to do this. Times up..it’s the night before the party, no turning back. So as you can see, i covered the board first to make it looked StarWarsey..is that even a word? Air brush has been my best friend in my cake journey. I absolutely love it.

Then i stacked and carved the cake. And yes in cheated, I borrowed the Darth Vader helmet and an Easter Darth Vader egg as my model. Told you I am surrounded by the fans.

Carved, covered with buttercream, fondant, paint, details…and there you have it..

The other 2 were more simple as you can see..

So in honor of the new Star Wars I am posting this to show my contribution to the Star Wars fan out there..

Healthi..errrr chocolate cake.

Yes you heard me…healthierrr…why? coz it does not use any butter lol.

I know I know..not really healthy..still it’s healthierrr.

I was skeptical at first when I read this recipe. But decided to give it a try and tweaked it so my brain would give me the ok to make them.

No butter no oil, yes. Mashed banana, applesauce, egg, vanilla, brown sugar, flour, cocoa powder, baking soda, salt and that’s it. Oh don’t forget the chocolate chip in the batter and on the top. Well…chocolate is from the cocoa bean so it’s technically fruit .. yes?

Let’s agree with me here. So this cake except for the E.G.G. can be categorized as almost vegetarian cake. Try it, it’s moist, chocolaty almost to a brownie taste  and texture. My vegan coworker liked it. She is my food tester and I trust her judgement ;).

Here is the recipe:

No mixer, all in a bowl, mix the wet ingredients first before adding the dry ingredients and last is the chocolate chip. Then pour the batter into a greased floured 8″ pan, I lined mine with parchment just because I always do. Reduces the risk of any cake sticking to the bottom and therefore caused more stressed and higher risk of making and eating more desserts. After all stressed backwards is desserts right?

here goes nothing…

3 mashed banana

1 cup brown sugar

1 teaspoon vanilla

1/2 cup applesauce

2 eggs

The dry:

1 cup flour

1/2 cup cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

The goodness morsels:

1 cup chocolate chip for the batter

1/4 cup chocolate chips for the top.

So after you mix all and pour in the pan, then sprinkle 1/4 cup chocolate chips on top of the batter then baked for like 20 minutes in preheated 350 degree F oven.

I think if I reduced the E.G.G. to just 1 it will make a more fudgy chocolate cake like a fudgy brownie like..

Pineapple upside down.

My husband birthday was a blast for us. Not only I finally was able to create his pineapple upside down cake that he had been asking me to make, we got to stop by 711 to get our free slurpees.

Yes slurpee with s. We stopped by at 3 locations lol. My son said to me..wow mommy is naughty. I was laughing and laughing… somehow getting free slupees and the idea of being naughty is so entertaining hahaha.

Back to the pineapple upside down cake.. when he asked for it, he meant it literally upside down pineapple. I have been thinking on how to make this happen. His birthday was on 711 and it finally ding on me that very morning on how to do that.

I decided to use wafer paper instead of fondant. Never work with wafer paper before. I cut up some leafy like shape, curl it with the brush handle, stick them to the cake, which i put it on a candle holder I borrowed from my mother in law.

Then, i sit back down, thinking..how am i gonna color this pineapple. As you probably know wafer paper is made of rice, so thin and fragile, so if i put liquid coloring, it will melt the paper.

Think think think…. i grabbed my dust..grabbed my brush and started dabbing colors..i did gold, copper, moss.  It’s soft looking…i was not liking it much. So I brave myself and took my airbrush tools…start with lemon yellow. I checked it…it looked better and did not make the paper melt. Contijue with the green and brown.

It looks like a pineapple lamp as it glows. Could be minions in disguise. That gives me idea for my next cake project.

Here is the process of making the decorations for the pineapple upside down. If I planned better, I would have make the cake inside pineapple upside down cake with brown sugar frosting…yumm.

3 2 1 Cake

I was doing my night time exercise last night while holding my kindle and pedalling on my stationary bike…and scrolling on pinterest. At first it was pumpkin cake, all sort of pumpkinish thingy that I was searching. Don’t know about you, but I get distracted so easily on Pinterest. Anyway..from searching for pumpkin cake and all pumpkin, I got sidetracked and search for cake in the microwave.

So many different recipe. I wanted to find one that is easy to make at work. Yes you heard me..at work so that when I am craving for some sweet yummy cake, I don’t have to run to Starbucks. Though their pumpkin bread is so good..see how easy I got sidetracked..!

from all of the recipe I found, looks like the basic of this 3 2 1 cake a.k.a microwave mug cake are by combining (or not) any flavor cake mix you choose with angel food cake cake mix in a ziploc bag. That is your base. When captain sweet tooth came and attacking you, grab that mix in ziploc bag, scoop 3 tablespoon of the mixture and add 2 tablespoon of water ( I think you are supposed to greased the cup/mug first), mix well then microwave for 1 minute. There it’s the 3 2 1 yumm!

I shared this finding with my co worker and we agreed on making pumpkin cake as our trial. So I am in charge to bring the pumpkin puree and pumpkin pie spice since the person in change of bringing the cake mix have yellow cake mix in her pantry and the other one going to grab the angel food cake mix.

Oh for this pumpkin cake we are supposed to replace 1 tablespoon of water with the pumpkin puree. And I am thinking to bring some chocolate chip to mix in the batter and make chocolate chip pumpkin cake. And maybe some icing, cream cheese icing or butterscotch icing. Wish us luck for tomorrow. I will definitely post the picture and the result tomorrow. So can’t wait to try it..tempted to do it at home tonight but I dragged myself from the kitchen and sit in front of my laptop and typing here instead. Til’ tomorrow guys…have a nice evening!

I am back…

Hi ya’ll..

It’s been a while I have not touch my blog. Been busy with my 8-5, my cake and of course family. At work, since my boss got sick and not able to work, I have been doing my job and his job since February. And now is summer break… so that’s pretty much what kept me busy. Before this break, we were busy with my son’s activities after work, from practice to practice ;).

What’s new with you? I challenged myself to enter a little cake competition for North Dallas. Was going to enter as first timer but I decided to do the beginner base on category they have it set up. The themed was Cake Me Out To The Ball Game.

Here is what I did for that themed cake category:

And I entered another category, which was celebration non tiered cake. Was thinking birthday and other celebrations but I ended up making the celebration cake for my son’s soccer team. They did so good and I think they deserve this cake. The team was Stingrays. Though at the end we did not use this cake for the team celebration. Both cake were sent to the Firemen to enjoy. So many awesome bakers with their creations that just blew me away.. I spent 2 full days walking around the event and watched demo and shop..oh so much fun. It’s the first time attending this cake event for me. My son went with me for the second day. He was a trooper..he stayed with me and did not complained.  I bought so many raffle tickets..guess what..won nothing booooo!

However, to my surprise, I won 2nd place for the baseball themed and 3rd place for the Stingrays soccer cake..Yeyyy for me!

Dimsum Cake

Dimsum Cake

I am going to meet my ex co-worker tomorrow morning for Dimsum. It’s her birthday and she just got married last month. We have not see each other for a long time. So for that I think it’s only perfect if I make her a birthday cake, well she did request for that :). Since we are having dimsum, I decided to make a dimsum themed cake. It was fun, no pressure project right? With 2 little 6 inches cake buttercream covered with fondant and airbrushed. Easy peasy ….. I thought. Then make the little dumplings to go with it. Everything went smooth until I was about to use my airbrush. It did not work!..oh no…I ask my brother and google the troubleshoot..video after video, then I decided to try to clean it for the how many times I lost count…and finally it worked..phew..all smooth after that. Thank God!!!. Here is the pictures of the cake. Hope she likes it…the cake is chocolate cake that I add coffee granules and the milk I replace with Starbucks Mocha drinks. Enjoy..:)!
