A very quick and easy dessert to prepare but looks like you spend a whole day to make it. Even my husband say it’s easy…my whole family loves that. I made it for my mother in law to try and she loves it.

8 oz mascarpone cheese
8 oz cream cheese
1 1/2 pint heavy cream
3/4 cup sugar
lady finger / angel food cake
3 tablespoon instant coffee
1/2 cup water
1/4 cup sugar
cocoa powder
dark chocolate

Put coffee, 1/4 cup of sugar and water in a pan and bring to boil.(Add rum if you like) Set aside.

Mix mascarpone and cream cheese in a mixer pan, and cream until it blends well.

Whipped heavy cream and sugar until stiff.

Fold in the whipped cream into the cheese mixture, mix well and set a side. (You could add rum in this mixture if you like).

In a clear square or round baking pan (9 inch) layered:

Lady finger dipped into coffee, both side, covered the base of the pan, then cheese mixture, dusted with cocoa powder using a strainer, then shredded dark chocolate, dipped lady finger, cheese, cocoa powder, shredded dark chocolate, repeat this layer until finish, usually 3 layer, ended by shredded dark chocolate. Garnish with leftover cheese.

Chill 3-4 hours before serving.

Rum could be substitute with other liquor that you like or without any liquor at all.
