White Bean Chili the Pampered Chef way by Carrie Shanks

It’s been a while I have not write anything on my blog, I am so sorry guys but I have been tied up with work, family and the beginning of my new businesses. Yes I am officially a Pampered Chef Consultant. And looking towards starting another gig that I will reveal as soon as I made up my mind. Anyway, these Pampered Chef gig had been such a fun and rewarding venue for me. As you all know I love cooking and baking, and being able to do it with such wonderful tools and gadget in the kitchen makes it even more fun. It’s easy to get kitchen tools, you can buy it anywhere and everywhere you shop. However, finding the right one that really do the job and do it good, it’s not an easy task. I have bought so many of the Pampered Chef products myself and tested it in my own kitchen and have not found any that I do not like. My fave is the Deep Covered Baker item # 1321 oh my what a wonderful thing to have it is. It comes in the Cranberry color which is really pretty, made of stone, easy clean up with no soap, I cooked from whole chicken with all the roots vegetable in it for 30 minutes, I cooked ribs, I baked cakes in 13 minutes. All done in Microwave.

The other things I like and my family likes are soup, specially when it’s cold outside. We have made Chicken parmesan soup, potato chowder, Chili, and the latest is white bean chili that was always been a hit with family and friends. And I also made Sheppard pies in it. The possibilities are infinity my 7 years old son said :). He helped me around the kitchen when he wants to and he loves the Pampered Chef Manual Food Chopper. I can talk and talk and talk about these products for hours if you won’t stop me. Yes they are that wonderful!

I won’t make you wait any longer, here is the recipe for the White Bean Chili :

White Bean Chili the Pampered Chef Way

Ingredients:

1 small onion
1 garlic
2 teaspoons cumin
1 teaspoon oregano
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
½ teaspoon cayenne pepper (or 1 teaspoon Sriracha chili sauce)
2 grilled chicken breast
2 cans of Great Northern Beans, drained and rinse (Or you can cooked your beans in advance and freeze them, that’s what I do, pack them in a small Ziploc bags and freeze them, thaw in refrigerator the night before).
1 can Shoepeg corn, drained and rinse
Optional: 1 can Hominy corn, drained and rinse
1 cans of chopped green chiles or 1 serrano pepper
2 cups low sodium chicken broth (Or make your own chicken broth and freeze them, this is something I do at home. Cooked the whole chicken to make the broth add a little salt, pepper and sometimes I throw in bouquet garni , use the chicken to make maybe chicken pot pie, dumplings, enchiladas, etc and keep the broth in freezer safe container to be use later)
Juice from 1 lime
Chopped Cilantro for garnish and use a little to cook with the Chili.
Sour Cream
Green Salsa (Jars or make your own fresh Salsa with the Pampered Chef ® #2581 Manual Food Processor
2 flour tortilla

Instructions:

Slice tortilla into thin strips with Pampered Chef ® #1052 5″ Utility Knife. Spray Pampered Chef ® #1342 Small Ridged Baker with vegetable oil using Pampered Chef ® #2506 Kitchen Spritzer .

Coats the tortilla strips with a little oil. Cook in microwave for 3-4 minutes stir every 1 minutes with Pampered Chef ® #1671 Multi Scraper until crispy, set aside on a Pampered Chef ® #2299 Small Bamboo Round Bowls, (Serve the garnish in this bowls).

Diced the grilled chicken in a Pampered Chef ® #1321 Deep Covered Baker using Pampered Chef ® #2582 Salad Chopper.

Chopped Onion and Cayenne Pepper in Pampered Chef ® #2581 Manual Food Processor.

Put chopped onion and pepper (or the can green chiles if you use the canned ones) into the Deep Covered Baker, mix using the Multi Scraper.

Add in the Great Northern Beans, Shoepeg Corn and or Hominy Corn, cumin, oregano, salt and pepper, cayenne (Sriracha), and garlic (press using Pampered Chef ® #2576 Garlic Press, you won’t have to peel the garlic), Lime juice from 1 lime, squeezed the juice using Pampered Chef ® #2595 Citrus Press. Mix well and pour in chicken broth.

Put the lid on and Microwave for 12 – 13 minutes. Let it sit for 5 minutes before serving.
